Why would you think so? If the game is based towards the parks and movies, why wouldn't an item that is directly based out of the parks be considered for the game? If you think about it, Jack is a HUGE part of the holiday season. He is given 3 months at the Haunted Mansion year after year, and even has his own stores within the park that are up 365 days. He isn't a random Disney character, he is quite a big deal now.

As for the ears part of it, like stated above, they are based off of the in park ears.
